High Protein Breakfast Wrap

High-Protein Breakfast Wrap

Ingredients:

2 oz. of cooked chicken or turkey breast, diced
3 Egg Whites, whisked
1 cup of spinach leaves
1 slice of reduced-fat swiss cheese
1 6-in whole wheat tortilla
Nonstick Cooking Spray

Directions:

Heat a nonstick skillet coated with nonstick cooking spray over medium heat. Add the chicken or turkey, eggs and spinach and scramble. Cook until eggs are cooked through - about 5 minutes. Add the cheese and remove from the heat. Pile mixture onto tortilla wrap, and wrap it up!

Cinnamon Ricotta Crunch

Another favorite of mine from the ChaLEAN Extreme Nutrition Guide. Wait until you taste this!!

Ingredients:

1 Cup Skim Ricotta Cheese
1 Tsp. Ground Cinnamon
2 TBS Slivered Almonds
1/2 Cup Berries

Directions:

Scoop the ricotta cheese into a cereal bowl. Mix in the cinnamon and berries. Top with slivered almonds.

Goat Cheese and Tomato Omelet

I'm working through the ChaLEAN Extreme program again and besides the Insanity Nutrition Guide, this guide is by FAR my favorite. I feel like Chalene is speaking to women here with meal prep being quick, simply, tasty, and not something that will make us blow up!

Here's a favorite of mine for breakfast:

Goat Cheese and Tomato Omelet

Ingredients
2 whole eggs whisked with 1 TBS skim milk
1 Plum tomato, chopped
1 oz. crumbled goat cheese

Nonstick Cooking Spray

Directions
Heat a nonstick skillet coated with nonstick cooking spray over medium heat. Add the whisked eggs and allow to cook for about 2-3 minutes. Then add in goat cheese and tomatoes and fold over into an omelet. Allow to cook for 1-2 additional minutes.

Mummy Cocktail Weenies

Okay so before I start this, let me just being by saying that I am no  Martha Stewart. If you come into my house you will most likely find chaos -- or it's really clean (but stuff is most likely shoved in a closet somewhere). I do not parade around in an apron and pearls - I.Am.Busy.

So when I stumble upon something that is super cute, and that helps me LOOK like my life is together in the kitchen - I take it! I originally got this idea last year from sugarandspice-celeste.blogspot.com  Check it out for other great ideas!

I made these adorable little cocktail weenies last year for our neighborhood's little "candy gathering" and they were gone when we left! (so I'd call that a success!)  I'll be making them again this year - they are so easy!

What You Need:

Cocktail Weenies
Pillsbury Crescents
Mustard

Directions: 

1. Preheat oven to 350 degrees
2. Unroll each crescent "triangle" and cut into thin strips
3. Place a cocktail weenie at one end of your strip and roll it down to the other end of the strip, "mummifying" the weenie
4. Place on a greased baking sheet
5. Continue until all of your ingredients are gone
6. Bake your weenies until golden brown (about 10 - 15 minutes)
7. Take out and let cool
8. Create glowing eyes with dabs of mustard

THAT'S IT! YOU'RE DONE! It's so super simple and they taste reeeeally good.
