Crispy Low Fat Oven Baked Chicken

I think it is safe to say, when you are on a fitness journey or starting to eat healthier the one thing you will be eating a lot of is chicken (unless you don't eat meat, of course). Chicken by itself can get real old, real quick so when I find a fantastic recipe for chicken that still keeps my nutrition on track, I share it with the world.

Here is one of my favorites that adds a nice little crisp to your chicken, without all the crazy fat and calories of KFC.


Crispy Low-Fat Oven-Baked Chicken


Ingredients:

8 6-8 oz boneless, skinless chicken breasts
2 cups plain bread crubms
1-2 Tbsp. vegetable oil
3 TBS hot pepper sauce
1 TBS Worcestershire sauce
1 tsp fresh ground black pepper
1 tsp salt (optional)

Directions:

In a large bowl, whisk together hot sauce, Worcestershire sauce, pepper and salt. Add the chicken and marinate in the refrigerator for 2 - 12 hours (the longer you marinade the more intense the flavor)

Preheat oven to 425 degrees. Remove chicken from marinade, add bread crumbs to the marinade, and mix well. Coat the chicken thoroughly with the mixture.

Spread oil over the bottom of a shallow 9"x13" baking dish. Arrange chicken in the dish and bake for 15-20 minutes. Turn chicken over and reduce the heat to 325 degrees. Cook for an additional 15-20 minutes or until juices run clear.

Makes 8 servings
