Spinach Salad

Spinach Salad

I'm a fan of the greens! The fiber found in vegetables can help to fill you up so you do not binge eat later, and this salad is no different. Try it out at your next dinner party, or pack it in a bag for lunch!

(Makes 1 Serving)

2 cups baby spinach or salad greens
1/2 medium cucumber, chopped
1/2 medium red bell pepper, sliced
1/4 cup sprouts
1/2 medium tomato, chopped
1/2 tsp extra-virgin olive oil
1 TBS fresh lemon juice
1 tsp raw pumpkin or sunflower seeds (an awesome substitute for the beloved crunch of croutons!)

Combine all ingredients in one bowl and add in olive oil and lemon juice. Toss gently to blend and enjoy!
