Delicious Chicken and Pear Salad

Sometimes when you are constantly eating salads life can get a little bland; however, I have found that one sure way to always switch things up is to combine your standard salad, some chicken, and some fruit! Many restaurants have even caught on to this by adding in strawberries, clementines, and even grapes to their chicken salads. This salad is sure to not disappoint by adding in the sweet taste of pears.

Pears have quite a few health benefits as well! Pears are mild and sweet in flavor and FULL of fiber to help fill you up and stay satisfied. In addition, pears are also rich in antioxidants and nutrients - packing all of the benefits into a cholesterol-free, 100 calorie package. Adding pears to your salad will give you the fiber boost needed to stay fuller longer, and paired with the chicken and greens - the flavor can't be beat!

Delicious Chicken & Pear Salad


Ingredients:

2 grilled chicken breasts, sliced
3 cups fresh spinach
1 peeled and sliced fresh pear
Handful of walnuts
1 cup grated Parmesan cheese

Dressing:

1/2 cup balsamic vinegar
1/2 cup olive oil
2 TBS honey

Directions:

In a large bowl, mix spinach, pear, and walnuts. Lay the slice chicken breast on top of the greens mixture.

Whisk the oil oil, balsamic vinegar, and honey. Pour over top of salad mixture and top with Parmesan

Makes 6 servings
