Baked Apple Oatmeal

Winter. All I want is comfort food. Casseroles, pot pies, just general home cooked, feels-like-your-food-is-giving-you-a-hug-as-you-eat-it-food. As we all know, casseroles can be very detrimental to our healthy eating (everything in moderation!) but I did find one amazing casserole, bake, crock pot meal -- whatever you want to call it - -that can keep you on track - And your house will smell AMAZING as it cooks (move over Yankee Candle!) The best bonus - it uses oatmeal! Eeee! I seriously love oatmeal and I love all flavors! But this..this oatmeal bake reminds me of a slice of hot apple pie. It's amazing. Try it out!


Winter Baked Apple Oatmeal

We make the oatmeal tastey!

Ingredients:

2 apples, peeled, cut, cored and chopped into 1/2 inch pieces
1 1/2 cups fat free milk (or almond milk)
1 1/2 cups water
1 cup uncooked steel cut oats
2 TBS Brown Sugar
1/2 tsp cinnamon
1 TBS ground flax (optional)
1/4 tsp salt

Directions:

Coat the inside of your crock pot with non-stick cooking spray - really coat the inside or you will need a jack hammer to clean your pot (no joke)

Add all of the ingredients, stir, and cook on low for 7 hours

This recipe can be saved for later by freezing or putting into the refrigerator. The best way to reheat is to put a cup of it in a microwave safe bowl  - zap it for 1 - 1 1/2 minutes and add in a little milk to stir up and make it creamy. I also like adding in a tiny box of Sunkissed Raisins to mine for even more flavor!
